Felt like a total peasant at the cheese monger yesterday 😅 The lady was patiently walking us through flavour profiles of a variety hard to soft cow/goat/sheep cheese (earthy, nutty, etc) from various terroir and I was struggling to fit them into my pre-existing framework of “orange or marble” 🧀
